Increasing knowledge of different types\nof produce can increase fruit and vegetable intake! Harvest of the Month is a long-standing program of\nthe Jackson in Action healthy living coalition. Find more healthy eating ideas at\nwww.JacksonInAction.org/recipes.\nThe Harvest of the Month for May is peas! Fresh sweet peas grown in Wisconsin are available in June\nand July. Wisconsin ranks third in the nation for the processing of peas. Peas are part of the legume\nfamily! Legumes produce pods that enclose fleshy\, edible seeds. Peas are seeds! Peas are easy to grow.\nFarmers and gardeners enjoy growing pea plants because they are low-maintenance and provide a\nnutritious and versatile food.\nDid you know? Peas have been found in historical sites that are nearly 10\,000 years old. Peas are\nthought to have originated from either Thailand and Myanmar\, the Middle East\, or Ethiopia. The peas\nour ancestors feasted on were very different from the peas we eat today. They were known as field peas\nand were much tougher and very starchy.\nPeas are a good source of fiber\, folate\, and Vitamin C. Fiber helps keep digestion running smoothly.\nFolate helps prevent birth defects\, is needed to make DNA\, and helps your cells divide\, including red\nblood cells. Vitamin C helps wounds heal\, is important for the immune system\, and is an antioxidant\nwhich protects cells from damage. Peas also contain lots of thiamin\, or vitamin B1 which helps keep the\nbody's nerves and nervous system healthy.\nWhen buying peas\, look for them in the pod. Fresh pea pods should be firm\, bright green\, and look like\nthey are almost bursting. Store fresh peas in the refrigerator in an open plastic bag. Shell the peas just\nbefore using. To remove the shell\, rinse and then pull the string down the length of the pod. Push the\npeas with your thumb.\nLooking for an easy snack recipe? Combine a bag of peas (frozen or fresh) with olive oil and shredded\nparmesan in a bowl. Spread the peas in a single layer on a baking tray. Cook in a 350-degree oven for 20-\n30 minutes but take the tray out ever 5-10 minutes to shake. Remove once the peas start to turn brown\nand allow to cool. Enjoy!

SUMMARY:12th Annual Emergency Responder Dinner @ Castle Hill Supper Club
DESCRIPTION:  \nWe invite you to our 12th Annual Emergency Responder Dinner at Castle Hill Supper Club\, just south of Merrillan. We will be serving prime rib\, baked chicken\, chef-carved ham and breaded shrimp with all the trimmings. Multiple raffle baskets and a money board will also be available for you to win big.\n$25 for adults. $10 for kids 7-10.\nWe prefer you purchase tickets in advance to help us plan by calling Claudia Fields at 715-896-0406\, but walk-ins are welcome.\nYour local fire and rescue department is an all-volunteer organization. We directly serve six area communities including the towns of Alma\, Garden Valley\, and Mentor and the villages of Alma Center\, Humbird\, and Merrillan. We also offer mutual aid services to surrounding communities.
